Two Week Rotating Menu
After struggling for a while with trying to organize a menu, I decided to just focus on what we end up actually eating versus trying new fancy recipes all the time. I asked my husband if he minds eating the same things over and over again and his response was a confused look and the question, "Why would I mind always eating what I like?" Yeah, he got some bonus points with that response.
We really decided that simplicity is best. We know the kids are getting good nutrition and we mix up the veggies as we can. We're happy with simple. We can even streamline things more by preparing double batches of some of these meals and then freezing portions for another meal.
For lunches, we usually have a salad along with whatever the meal is. For dinners, we are typically serving two veggies with the meal. Usually we do a salad of different greens and another vegetable. We have "leftovers" written quite a bit, because cooking this many different meals guarantees leftovers, even if a meal is a hodge podge of different leftovers. We don't like to throw things out. :)
